Accident Muffins… YUM!

These muffins are delicious.  My kids and even my husband (who is always suspicious of anything gluten free) loved them.  I think that says a lot.  And they happened when I made a mistake, so now we call them the mistake muffins. :) BTW - I made them again, afraid of not being able to recreate them… and I did! so the recipe is foolproof.

Ingredients:

4 bananas

4 organic eggs

1/2 cup of almond butter (don’t skip it, I think these helped them be so moist)

4 tbsp of coconut oil (melted)

1/4 cup of cooconut flour

1/4 almond flour

1/2 teaspoon of cinnamon

1 teaspoon of vanilla

1 teaspoon of baking soda

Semi sweet, no soy chocolate chips

Optional:

1/4 of  a cup of coconut sugar or o monkfruit (if you want it sweeter)

Instrucctions

Heat oven at 350F.  Use paper liners for your muffin tin.

Mix all the ingredients… now, you may laugh, but this is where my mistake happened.  I’m very practical in the kitchen (who has time for crazy instructions) so I use my vitamix to mix it all together at once.  Well I used the soup function (don’t ask me why) so the mix was actually quite warm when it was done. 

When I added the chips, these melted (obviously!) and created these delicious chocolate ribbons… like seriously? Amazing!

Don’t worry if you’re not able to make that happen, believe me no one will know that these muffins are totally grain free, very healthy, with healthy fats… they will be too happy eating them up.

Let’s continue (sorry, I got distracted lol)

Pour the batter in the tin and add a few more chips on the top, because… chocolate :)

Bake for 15 to 20 mins.

You probably know this already, but they are ready when poke them with a knife and this one comes out clean.
