Yummiest Salmon Option

If you’re trying to eat more fish… but have run out of ideas, you’ve come to the right place.  These patties are delicious… trust me! This is definitely a family fave.

Ingredients:

2 wild-caught salmon fillets

1 zucchini

6 tablespoons of almond flour

Sea salt

Instructions:

Start with your (raw) zucchini. You can either spiralize it, if you have one of those fancy machines, or you can try a trick my friend Nati from happyandglow.com taught me: use a vegetable peeler.  Apply light pressure and work lengthwise so you end up with zucchini noodles.  You can also use a grater if it's easier for you. Either way, avoid the center part with the seeds, otherwise your mix will end up "mushy".

Once your zucchini noodles are done, make sure to squeeze out all water excess with a paper towel.

Next, take the skin off the salmon fillet, discard it and mix the salmon with the zucchini, adding the almond flour. You can mix by hand or with a fork.  Or you can use a food processor.  Add salt.

Once you have a nice mix, you can form the patties and either bake them or fry them.  I have made them both ways.  If you fry them, please use coconut or avocado oil for added healthy fats.

Serve with a slice of lemon and enjoy!
